Description

These gooey cinnamon cream cheese muffins are soft, flavorful, and perfect for breakfast or a snack, featuring a creamy center and warm cinnamon notes.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill each muffin cup halfway with batter, then add a spoonful of softened cream cheese in the center.
  6. Top with more batter to cover the cream cheese.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra gooeyness, ensure the cream cheese is at room temperature before using. Store leftovers in an airtight container in the refrigerator for up to 3 days.
