- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
- Add milk, vegetable oil, and vanilla extract to the dry ingredients, mixing until smooth.
- Fill each cupcake liner halfway with batter.
- Add a spoonful of peanut butter in the center of each.
- Cover with more batter until liners are 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted shows a gooey center.
- Let cool for 5 minutes before serving.
Notes
For a richer flavor, use dark cocoa powder. Ensure the peanut butter is at room temperature for easier handling.
