- 700g beef fillet or sirloin, cut into strips
- 3 tbsp olive oil
- 1 large onion, finely chopped
- 250g button mushrooms, sliced
- 2 cloves garlic, minced
- 300ml beef stock
- 2 tsp Dijon mustard
- 200ml sour cream
- 2 tbsp butter
- Salt and freshly ground black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Heat the butter in a large frying pan over medium heat and sautรฉ the onions for 2-3 minutes until softened but not coloured.
- Add the sliced mushrooms and continue to cook for another 3 minutes until the mushrooms are tender.
- Increase the heat and add the beef strips, seasoning with salt and pepper. Cook for 2-3 minutes until browned, stirring occasionally.
- Pour in the beef stock and bring to a simmer. Stir in the Dijon mustard and allow the sauce to reduce slightly.
- Lower the heat and stir in the sour cream. Heat gently for 1-2 minutes without boiling to prevent curdling.
- Serve immediately over rice or pasta, garnished with fresh parsley.
