For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup milk
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fresh blackberries
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC) and line a cupcake tray with liners.
- In a bowl, cream the butter and sugar until fluffy. Add eggs one at a time, beating well after each addition, and mix in vanilla extract.
- In a separate bowl, combine flour, baking powder, and salt. Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture.
- Fold in the blackberries gently.
- Fill the cupcake liners two-thirds full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
- For the frosting, whip heavy cream and powdered sugar together until stiff peaks form. Pipe or spread onto cooled cupcakes.
