For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blackberries
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC) and line a cupcake tray with liners.
  2. In a bowl, cream the butter and sugar until fluffy. Add eggs one at a time, beating well after each addition, and mix in vanilla extract.
  3. In a separate bowl, combine flour, baking powder, and salt. Gradually add to butter mixture alternately with milk, beginning and ending with flour mixture.
  4. Fold in the blackberries gently.
  5. Fill the cupcake liners two-thirds full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
  7. For the frosting, whip heavy cream and powdered sugar together until stiff peaks form. Pipe or spread onto cooled cupcakes.
