For the Crust:

  • 1.5 pounds baby potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 450ยฐF (230ยฐC).
  2. Boil the potatoes in salted water until tender, about 15 minutes. Drain and allow them to cool slightly.
  3. Place the potatoes on a baking sheet and gently flatten with a fork. Drizzle with olive oil, and season with salt and pepper.
  4. Bake in the preheated oven for 20 minutes, until the edges are crispy.
  5. In a small bowl, mix together sour cream, parsley, chives, and garlic powder. Season to taste.
  6. Serve the smashed potatoes warm, topped with the creamy herb sauce.
