For the Crust:
- 1.5 pounds baby potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 teaspoon garlic powder
Instructions
1. Prepare the Crust:
- Preheat the oven to 450ยฐF (230ยฐC).
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and allow them to cool slightly.
- Place the potatoes on a baking sheet and gently flatten with a fork. Drizzle with olive oil, and season with salt and pepper.
- Bake in the preheated oven for 20 minutes, until the edges are crispy.
- In a small bowl, mix together sour cream, parsley, chives, and garlic powder. Season to taste.
- Serve the smashed potatoes warm, topped with the creamy herb sauce.
