This is a flavorful one-pot Greek chicken and lemon rice dish that’s ready in just 30 minutes, combining tender chicken, zesty lemon, and aromatic rice for a quick and easy meal.

- 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- Juice of 2 lemons
- Zest of 1 lemon
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned, about 5 minutes.
- Add chopped onion and minced garlic to the pot and sauté until softened, about 2 minutes.
- Stir in the rice, chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
- Stir in frozen peas and cook for an additional 2 minutes. Remove from heat.
- Garnish with fresh parsley and serve immediately.
Notes
For a zestier flavor, add extra lemon juice. This dish pairs well with a Greek salad.
