Description

This is a flavorful one-pot Greek chicken and lemon rice dish that’s ready in just 30 minutes, combining tender chicken, zesty lemon, and aromatic rice for a quick and easy meal.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned, about 5 minutes.
  2. Add chopped onion and minced garlic to the pot and sauté until softened, about 2 minutes.
  3. Stir in the rice, chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  5. Stir in frozen peas and cook for an additional 2 minutes. Remove from heat.
  6. Garnish with fresh parsley and serve immediately.

Notes

For a zestier flavor, add extra lemon juice. This dish pairs well with a Greek salad.
