For the Crust:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 large egg
- 1/4 cup chopped fresh parsley
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Tzatziki: 1 cup plain Greek yogurt
- 1/2 cup grated cucumber, squeezed dry
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 small garlic clove, minced
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, red onion, minced garlic, egg, parsley, oregano, salt, and pepper. Mix gently until just combined.
- Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake for 15-18 minutes, or until the meatballs are cooked through and golden brown.
- While the meatballs bake, make the tzatziki. In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, and salt until well combined. Refrigerate until ready to serve.
- Serve the warm meatballs with the cool tzatziki sauce on the side for dipping.
