For the Crust:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Tzatziki: 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • 1 small garlic clove, minced
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, red onion, minced garlic, egg, parsley, oregano, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15-18 minutes, or until the meatballs are cooked through and golden brown.
  5. While the meatballs bake, make the tzatziki. In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, dill, minced garlic, and salt until well combined. Refrigerate until ready to serve.
  6. Serve the warm meatballs with the cool tzatziki sauce on the side for dipping.
