- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 cup cooked rice
- 1/2 cup tzatziki sauce
Instructions
- In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.
- Preheat grill to medium-high heat. Thread chicken onto skewers.
- Grill chicken skewers for 10-12 minutes, turning occasionally, until cooked through.
- Assemble bowls with cooked rice, grilled chicken, cherry tomatoes, cucumber, and red onion.
- Drizzle with tzatziki sauce and serve immediately.
Notes
For a vegetarian option, substitute chicken with grilled vegetables. Ensure chicken reaches an internal temperature of 165°F.
