Ingredients

  • 2 pounds boneless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup cooked rice
  • 1/2 cup tzatziki sauce

Instructions

  1. In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat. Thread chicken onto skewers.
  3. Grill chicken skewers for 10-12 minutes, turning occasionally, until cooked through.
  4. Assemble bowls with cooked rice, grilled chicken, cherry tomatoes, cucumber, and red onion.
  5. Drizzle with tzatziki sauce and serve immediately.

Notes

For a vegetarian option, substitute chicken with grilled vegetables. Ensure chicken reaches an internal temperature of 165°F.
