Ingredients

  • 1 pound chicken breast, cubed
  • For the Tzatziki: 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 tablespoon fresh dill, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • For the Bowls: 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1/2 cup Kalamata olives

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, lemon juice, garlic, and oregano. Add cubed chicken and marinate for at least 30 minutes.
  2. Cook the chicken: Heat a grill or skillet over medium heat. Cook chicken for 5-7 minutes per side until fully cooked.
  3. Prepare tzatziki: In another bowl, mix Greek yogurt, grated cucumber, dill, garlic, salt, and pepper. Chill in the fridge.
  4. Assemble bowls: Divide cooked quinoa into bowls. Top with grilled chicken, tzatziki, cherry tomatoes, red onion, and olives.
  5. Serve immediately for the best flavor.

Notes

For a vegetarian option, substitute chicken with grilled halloumi cheese. Ensure cucumber is well-drained to avoid watery tzatziki.
