Description

Tender chicken smothered in green chile sauce, wrapped in burritos and topped with melted cheese for a comforting meal.


Ingredients

Scale
  • 2 cups shredded cooked chicken
  • 1 (4 oz) can diced green chiles
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup enchilada sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken, green chiles, garlic powder, cumin, salt, and pepper.
  3. Lay out tortillas and divide the chicken mixture evenly among them.
  4. Sprinkle cheese on top of the chicken mixture in each tortilla.
  5. Fold the tortillas into burritos and place them seam-side down in a baking dish.
  6. Pour enchilada sauce over the burritos and top with remaining cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Remove from oven and let cool for 5 minutes before serving.
  9. Top with sour cream if desired.

Notes

For a spicier version, use hot green chiles. Store leftovers in the refrigerator for up to 3 days.
