- 2 boneless, skinless chicken breasts
- 8 oz pasta (such as penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cucumber, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinaigrette dressing
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side until fully cooked. Let rest and slice.
- Cook pasta according to package instructions; drain and rinse under cold water.
- In a large bowl, combine cooked pasta, sliced chicken, cherry tomatoes, red onion, cucumber, and fresh basil.
- Drizzle with balsamic vinaigrette and toss to coat evenly.
- Season with additional salt and pepper if needed, then chill for 30 minutes before serving.
