Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (such as penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cucumber, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic vinaigrette dressing
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side until fully cooked. Let rest and slice.
  3. Cook pasta according to package instructions; drain and rinse under cold water.
  4. In a large bowl, combine cooked pasta, sliced chicken, cherry tomatoes, red onion, cucumber, and fresh basil.
  5. Drizzle with balsamic vinaigrette and toss to coat evenly.
