- 1 red bell pepper, sliced

- Mixed salad greens
- Cherry tomatoes, halved

Instructions
- In a bowl, combine olive oil, lime juice, zest, chili powder, and cumin to make the marinade.
- Add chicken breasts to the marinade and let sit for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-7 minutes per side until cooked through.
- While chicken is grilling, sauté bell peppers and onion in a pan until tender.
- Slice the grilled chicken and assemble the salad with greens, tomatoes, avocado, and sautéed vegetables.
- Top with fresh cilantro and serve immediately.
Notes
