Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lime, juiced and zested
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • Mixed salad greens
  • Cherry tomatoes, halved
  • Avocado, sliced
  • Fresh cilantro, chopped

Instructions

  1. In a bowl, combine olive oil, lime juice, zest, chili powder, and cumin to make the marinade.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes per side until cooked through.
  5. While chicken is grilling, sauté bell peppers and onion in a pan until tender.
  6. Slice the grilled chicken and assemble the salad with greens, tomatoes, avocado, and sautéed vegetables.
  7. Top with fresh cilantro and serve immediately.

Notes

For a spicier version, add jalapeños to the marinade. Ensure chicken reaches an internal temperature of 165°F.
