- 2 ribeye steaks (about 1 inch thick)
- Salt and black pepper to taste
- 4 ounces blue cheese, crumbled
- 2 tablespoons unsalted butter, softened
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
Instructions
- In a small bowl, mix together the blue cheese, softened butter, garlic, and parsley until well combined. Shape into a log, wrap in plastic wrap, and refrigerate until firm.
- Preheat the grill to high heat. Season the steaks generously with salt and black pepper on both sides.
- Grill the steaks for 4-5 minutes per side for medium-rare, or until desired doneness is reached.
- Remove the steaks from the grill and let them rest for 5 minutes. Slice the blue cheese butter and place on top of the steaks before serving.
