Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • Salt and black pepper to taste
  • 4 ounces blue cheese, crumbled
  • 2 tablespoons unsalted butter, softened
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a small bowl, mix together the blue cheese, softened butter, garlic, and parsley until well combined. Shape into a log, wrap in plastic wrap, and refrigerate until firm.
  2. Preheat the grill to high heat. Season the steaks generously with salt and black pepper on both sides.
  3. Grill the steaks for 4-5 minutes per side for medium-rare, or until desired doneness is reached.
  4. Remove the steaks from the grill and let them rest for 5 minutes. Slice the blue cheese butter and place on top of the steaks before serving.
