For the Crust:
- 1 lb ground turkey
- 1 cup cherry tomatoes, halved
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh basil
Instructions
1. Prepare the Crust:
- Preheat your oven to 400ยฐF (200ยฐC).
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, salt, pepper, and chopped basil. Mix until well combined.
- Form mixture into small meatballs and place on a baking sheet lined with parchment paper. Press a halved cherry tomato onto each meatball.
- Drizzle olive oil over the meatballs and bake in the preheated oven for about 20-25 minutes or until cooked through.
- Serve immediately with a sprinkle of fresh basil on top.
