Description

A vibrant salad combining creamy burrata with earthy roasted beets and sweet maple-glazed carrots for a seasonal delight.


Ingredients

Scale
  • 4 medium beets, trimmed and washed
  • 2 large carrots, peeled and sliced
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 oz burrata cheese
  • 4 cups mixed greens
  • 1/4 cup walnuts, toasted
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. Toss the beets with 1 tablespoon of olive oil, salt, and pepper, then wrap in foil and roast for 45-50 minutes until tender.
  3. For the carrots, mix with maple syrup, salt, and pepper, then roast on a baking sheet for 20-25 minutes, stirring halfway.
  4. Once cooled, slice the beets and arrange on a platter with mixed greens, roasted carrots, and pieces of burrata.
  5. Top with toasted walnuts and drizzle with balsamic glaze before serving.

Notes

For the best flavor, use fresh, in-season produce. This salad pairs well with a light white wine.
