Ingredients

- 4 medium beets, trimmed and washed
- 2 large carrots, peeled and sliced
- 2 tablespoons pure maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 oz burrata cheese
- 4 cups mixed greens
- 1/4 cup walnuts, toasted
- Balsamic glaze for drizzling
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Toss the beets with 1 tablespoon of olive oil, salt, and pepper, then wrap in foil and roast for 45-50 minutes until tender.
- For the carrots, mix with maple syrup, salt, and pepper, then roast on a baking sheet for 20-25 minutes, stirring halfway.
- Once cooled, slice the beets and arrange on a platter with mixed greens, roasted carrots, and pieces of burrata.
- Top with toasted walnuts and drizzle with balsamic glaze before serving.
Notes
For the best flavor, use fresh, in-season produce. This salad pairs well with a light white wine.
