For the Crust:
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup frozen corn
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned.
- Add the chopped onion, minced garlic, and diced bell pepper to the pot. Cook until vegetables are softened.
- Stir in smoked paprika and cumin, then add diced tomatoes and chicken broth. Bring to a simmer and cook for about 20 minutes. Add corn, season with salt and pepper, and cook for an additional 5 minutes.
