Ingredients

For the Crust:

  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup frozen corn
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned.
  2. Add the chopped onion, minced garlic, and diced bell pepper to the pot. Cook until vegetables are softened.
  3. Stir in smoked paprika and cumin, then add diced tomatoes and chicken broth. Bring to a simmer and cook for about 20 minutes. Add corn, season with salt and pepper, and cook for an additional 5 minutes.

Notes

You can customize the seasonings to taste.
