Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Roll the dough into small balls and place on the baking sheet. Press your thumb into the center of each ball to make an indentation.
- Bake for 10-12 minutes or until edges are lightly golden.
- Remove from oven and let cool slightly, then fill the indentations with jam.
Notes
