Description

A luxurious cheesecake combining the tartness of blackberries with the nutty crunch of pistachios, creating a dreamy dessert.


Ingredients

  • 2 cups fresh blackberries
  • 1 cup shelled pistachios, chopped
  • 2 packages (16 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing well after each addition.
  4. Fold in chopped pistachios and blackberries gently.
  5. Pour the batter over the crust and smooth the top.
  6. Bake for 55-60 minutes or until the center is set. Let cool completely before refrigerating for at least 4 hours.

Notes

For best results, use ripe blackberries and fresh pistachios. Store in an airtight container in the refrigerator for up to 3 days.
