- 2 cups fresh blackberries
- 1 cup shelled pistachios, chopped
- 2 packages (16 oz) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing well after each addition.
- Fold in chopped pistachios and blackberries gently.
- Pour the batter over the crust and smooth the top.
- Bake for 55-60 minutes or until the center is set. Let cool completely before refrigerating for at least 4 hours.
Notes
For best results, use ripe blackberries and fresh pistachios. Store in an airtight container in the refrigerator for up to 3 days.
