Description

These Heavenly Neapolitan Cream Cupcakes feature a light vanilla base with layers of chocolate, strawberry, and creamy frosting, perfect for any dessert lover.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup cocoa powder for chocolate layer
  • 1/4 cup strawberry puree for strawberry layer
  • 1 cup heavy cream for frosting
  • 2 tablespoons powdered sugar for frosting

Instructions

  1. Preheat oven to 350°F and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. Gradually add flour and milk, alternating between the two.
  5. Divide batter into three portions: leave one plain, mix cocoa into the second, and strawberry puree into the third.
  6. Layer the batters into the cupcake liners: start with vanilla, then chocolate, then strawberry.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. While cooling, whip heavy cream and powdered sugar until stiff peaks form for frosting.
  9. Frost the cooled cupcakes and serve.

Notes

For best results, use fresh strawberries in the puree and store cupcakes in an airtight container.
