For the Crust:
- 4 salmon fillets (6 oz each)
- 1 cup cream cheese, softened
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh chives, chopped
- 1 tsp lemon zest
- 1 lb asparagus, trimmed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, dill, chives, and lemon zest until well combined.
- Lay each salmon fillet flat and spread a quarter of the herbed cheese mixture evenly over the top. Roll the fillet tightly and secure with a toothpick.
- Toss asparagus with olive oil, salt, and pepper. Arrange on the baking sheet and place salmon rolls on top.
- Bake for 20-25 minutes, until salmon is cooked through and asparagus is tender.
- Serve immediately, garnished with additional fresh herbs if desired.
