Description

Delicate salmon fillets stuffed with herbed cream cheese, rolled, and served atop perfectly roasted asparagus for an elegant and flavorful dish.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 cup cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh chives, chopped
  • 1 tsp lemon zest
  • 1 lb asparagus, trimmed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a bowl, mix cream cheese, dill, chives, and lemon zest until well combined.
  3. Lay each salmon fillet flat and spread a quarter of the herbed cheese mixture evenly over the top. Roll the fillet tightly and secure with a toothpick.
  4. Toss asparagus with olive oil, salt, and pepper. Arrange on the baking sheet and place salmon rolls on top.
  5. Bake for 20-25 minutes, until salmon is cooked through and asparagus is tender.
  6. Serve immediately, garnished with additional fresh herbs if desired.
