- 2 pounds boneless chicken thighs
- 1 cup crumbled feta cheese
- 2 lemons, juiced and zested
- 1/4 cup fresh herbs (such as oregano and thyme), chopped
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- Salt and pepper to taste
- 2 cups baby potatoes, halved
- 1 red onion, sliced
- 1 bell pepper, sliced
Instructions
- Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a large bowl, combine chicken thighs, lemon juice, zest, herbs, garlic, olive oil, salt, and pepper. Toss to coat evenly.
- Arrange the chicken, potatoes, onion, and bell pepper on the prepared sheet pan.
- Sprinkle feta cheese over the top.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Remove from oven and let rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken for 30 minutes before baking. Serve with a side of fresh greens.
