Ingredients

  • 2 pounds boneless chicken thighs
  • 1 cup crumbled feta cheese
  • 2 lemons, juiced and zested
  • 1/4 cup fresh herbs (such as oregano and thyme), chopped
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • Salt and pepper to taste
  • 2 cups baby potatoes, halved
  • 1 red onion, sliced
  • 1 bell pepper, sliced

Instructions

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a large bowl, combine chicken thighs, lemon juice, zest, herbs, garlic, olive oil, salt, and pepper. Toss to coat evenly.
  3. Arrange the chicken, potatoes, onion, and bell pepper on the prepared sheet pan.
  4. Sprinkle feta cheese over the top.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. Remove from oven and let rest for 5 minutes before serving.

Notes
