Description

A hearty, nutritious soup featuring white beans as the main protein source, packed with vegetables and herbs for flavor.


Ingredients

  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups spinach, chopped
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sautรฉ until softened, about 5 minutes.
  3. Add drained white beans and vegetable broth; bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in chopped spinach and cook for another 5 minutes.
  6. Season with salt and pepper, then serve hot.

Notes

For a vegan option, use vegetable broth; add lemon juice for extra zest.
