- 2 cans (15 oz each) white beans, drained and rinsed
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 2 cups spinach, chopped
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sautรฉ until softened, about 5 minutes.
- Add drained white beans and vegetable broth; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in chopped spinach and cook for another 5 minutes.
- Season with salt and pepper, then serve hot.
Notes
For a vegan option, use vegetable broth; add lemon juice for extra zest.
