For the Crust:
- 3 ripe bananas
- 2 cups milk
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 package vanilla wafers
Instructions
1. Prepare the Crust:
- In a medium saucepan, whisk together sugar, flour, and salt. Gradually add the milk, stirring constantly.
- Cook over medium heat until thick and bubbly. Reduce heat and cook for 2 more minutes. Remove from heat.
- In a small bowl, beat the eggs. Slowly add a small amount of the hot milk mixture to the eggs, then return all to the pan. Cook and stir for 2 minutes, then remove from heat and add vanilla.
- Layer wafers, bananas, and pudding in a serving bowl or individual cups. Chill for at least 1 hour before serving.
