For the Crust:

  • 3 ripe bananas
  • 2 cups milk
  • 1/2 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 package vanilla wafers

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, whisk together sugar, flour, and salt. Gradually add the milk, stirring constantly.
  2. Cook over medium heat until thick and bubbly. Reduce heat and cook for 2 more minutes. Remove from heat.
  3. In a small bowl, beat the eggs. Slowly add a small amount of the hot milk mixture to the eggs, then return all to the pan. Cook and stir for 2 minutes, then remove from heat and add vanilla.
  4. Layer wafers, bananas, and pudding in a serving bowl or individual cups. Chill for at least 1 hour before serving.

Notes

You can customize the seasonings to taste.
