For the Crust:

  • 4 cups fresh blackberries
  • 1 cup granulated sugar, divided
  • 1/2 cup water
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a saucepan, combine blackberries, 1/2 cup sugar, and water. Bring to a boil, then reduce heat and simmer for 5 minutes. Pour into a 9×9 inch baking dish.
  2. In a medium bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in the milk until just combined to form a batter.
  3. Pour the melted butter into the baking dish over the blackberry mixture. Do not stir. Spoon the batter evenly over the top. Bake for 30-35 minutes, or until the top is golden brown and cooked through.
