A hearty soup featuring meatballs, pasta, and greens in a flavorful broth.
Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons chopped parsley
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 1/2 cup acini di pepe pasta
- 4 cups spinach leaves
- Salt and pepper to taste
Instructions
- In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, and parsley. Form into small meatballs.
- In a large pot, sauté onion, carrots, and celery until softened.
- Add chicken broth and bring to a boil. Add meatballs and pasta; simmer until cooked through.
- Stir in spinach and cook until wilted. Season with salt and pepper.
- Serve hot.
Notes
For a vegetarian version, substitute meatballs with vegetable balls.
