Description

A hearty soup featuring meatballs, pasta, and greens in a flavorful broth.


Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons chopped parsley
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 1/2 cup acini di pepe pasta
  • 4 cups spinach leaves
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, and parsley. Form into small meatballs.
  2. In a large pot, sauté onion, carrots, and celery until softened.
  3. Add chicken broth and bring to a boil. Add meatballs and pasta; simmer until cooked through.
  4. Stir in spinach and cook until wilted. Season with salt and pepper.
  5. Serve hot.

Notes

For a vegetarian version, substitute meatballs with vegetable balls.
