- 1 pound carrots, peeled and sliced
- 1/2 pound green beans, trimmed
- 2 tablespoons honey
- 2 tablespoons butter
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1 teaspoon fresh thyme
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add the carrots and cook for 5 minutes.
- Step 2: Add the green beans to the pot and cook for an additional 3-4 minutes until vegetables are tender-crisp. Drain and set aside.
- Step 3: In a large skillet, melt the butter and olive oil over medium heat.
- Step 4: Add the honey, salt, pepper, and thyme (if using) to the skillet and stir to combine.
- Step 5: Add the drained carrots and green beans to the skillet and toss to coat evenly in the honey glaze.
- Step 6: Cook for 2-3 minutes, stirring occasionally, until the vegetables are glazed and heated through.
- Step 7: Serve immediately as a side dish.

For a vegan version, substitute butter with a plant-based alternative.
