- 8 ounces high-quality white chocolate, chopped
- 1/4 cup heavy cream
- 2 tablespoons honey
- 1 teaspoon dried lavender buds
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Additional white chocolate for coating, melted
Instructions
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Remove from heat and stir in the honey, lavender buds, vanilla extract, and salt. Let it steep for 10 minutes.
- Strain the mixture to remove the lavender buds, then return to the saucepan.
- Add the chopped white chocolate and stir until fully melted and smooth.
- Pour the mixture into a bowl and refrigerate for 2 hours or until firm.
- Once firm, use a spoon to scoop out portions and roll into balls.
- Dip each ball into the melted white chocolate for coating, then place on a parchment-lined sheet.
- Refrigerate again for 30 minutes until set.
Notes
For the best flavor, use fresh lavender if available. Store truffles in an airtight container in the refrigerator for up to a week.
