Description

This recipe features chicken glazed with a sweet and tangy honey mustard sauce, accompanied by roasted vegetables for a wholesome meal.


Ingredients

  • 4 bone-in chicken thighs
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed vegetables (such as carrots, potatoes, and broccoli)
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
  3. Place chicken thighs in a baking dish and brush with the honey mustard mixture.
  4. Toss the mixed vegetables with the remaining honey mustard mixture and spread them around the chicken.
  5. Sprinkle fresh thyme over the top.
  6. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and vegetables are tender.

Notes

For a spicier version, add some cayenne pepper to the glaze.
