- 4 bone-in chicken thighs
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups mixed vegetables (such as carrots, potatoes, and broccoli)
- 1 tablespoon fresh thyme
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper.
- Place chicken thighs in a baking dish and brush with the honey mustard mixture.
- Toss the mixed vegetables with the remaining honey mustard mixture and spread them around the chicken.
- Sprinkle fresh thyme over the top.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and vegetables are tender.
Notes
For a spicier version, add some cayenne pepper to the glaze.
