For the Crust:
- 1 cup all-purpose flour
- 1/2 cup honey
- 1 cup chopped peaches
- 8 oz cream cheese
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat your oven to 350ยฐF (175ยฐC) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the butter and honey until creamy. Add the eggs one at a time, then stir in vanilla extract.
- Combine the dry ingredients with the wet mixture until smooth. Gently fold in the peaches.
- In a separate bowl, beat the cream cheese until smooth. Fill each muffin cup halfway with batter, add a dollop of cream cheese, then top with more batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Cool before serving.
