Description

Delightfully soft cupcakes with a cream cheese filling, enhanced by the sweetness of honey and fresh peaches.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup honey
  • 1 cup chopped peaches
  • 8 oz cream cheese
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and honey until creamy. Add the eggs one at a time, then stir in vanilla extract.
  4. Combine the dry ingredients with the wet mixture until smooth. Gently fold in the peaches.
  5. In a separate bowl, beat the cream cheese until smooth. Fill each muffin cup halfway with batter, add a dollop of cream cheese, then top with more batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Cool before serving.
