Description

Delicious cupcakes featuring honey, fresh peaches, and cream cheese for a perfect sweet treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup honey
  • 2 ripe peaches, peeled and diced
  • 4 oz cream cheese, softened
  • For frosting: 8 oz cream cheese, 1/4 cup honey, 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla and honey.
  5. Gradually add dry ingredients to wet, mixing until combined.
  6. Fold in diced peaches.
  7. Fill cupcake liners 2/3 full and bake for 18-20 minutes.
  8. Let cool completely, then frost with cream cheese mixture.

Notes

Store in an airtight container for up to 3 days. Use fresh, ripe peaches for best flavor.
