- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
- 2 ripe peaches, peeled and diced
- 4 oz cream cheese, softened
- For frosting: 8 oz cream cheese, 1/4 cup honey, 1 teaspoon vanilla
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla and honey.
- Gradually add dry ingredients to wet, mixing until combined.
- Fold in diced peaches.
- Fill cupcake liners 2/3 full and bake for 18-20 minutes.
- Let cool completely, then frost with cream cheese mixture.
Notes
Store in an airtight container for up to 3 days. Use fresh, ripe peaches for best flavor.
