- 1 pound carrots, peeled and sliced
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots with honey, olive oil, salt, and pepper until evenly coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize.
- Remove from the oven and sprinkle with feta cheese, dried cranberries, and chopped walnuts.
- Return to the oven for an additional 5 minutes to warm through.
- Serve immediately.
Notes
