Description

A delicious side dish featuring sweet honey-roasted carrots combined with tangy feta, dried cranberries, and crunchy walnuts for a perfect balance of flavors.


Ingredients

  • 1 pound carrots, peeled and sliced
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots with honey, olive oil, salt, and pepper until evenly coated.
  3. Spread the carrots on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize.
  5. Remove from the oven and sprinkle with feta cheese, dried cranberries, and chopped walnuts.
  6. Return to the oven for an additional 5 minutes to warm through.
  7. Serve immediately.

Notes

This recipe pairs well with roasted meats or as a standalone salad. For a vegan version, omit the feta cheese.
