- 1 pound carrots, peeled and cut into 2-inch pieces
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots with honey, olive oil, salt, and pepper.
- Spread carrots on a baking sheet and roast for 20-25 minutes, stirring halfway, until tender.
- Remove from oven and top with feta, cranberries, and walnuts.
- Serve warm.
Notes
For a vegan version, substitute feta with a plant-based alternative.
