Description

Roasted carrots glazed with honey, topped with feta cheese, dried cranberries, and walnuts for a sweet and savory side dish.


Ingredients

  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots with honey, olive oil, salt, and pepper.
  3. Spread carrots on a baking sheet and roast for 20-25 minutes, stirring halfway, until tender.
  4. Remove from oven and top with feta, cranberries, and walnuts.
  5. Serve warm.

Notes

For a vegan version, substitute feta with a plant-based alternative.
