Description

Sweet carrots roasted with honey and paired with creamy whipped feta for a delicious side dish.


Ingredients

  • 1 pound carrots, peeled and trimmed
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • For the whipped feta:
  • 4 ounces feta cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the carrots with honey, olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
  4. While the carrots are roasting, prepare the whipped feta: In a food processor, blend feta, Greek yogurt, and lemon juice until smooth.
  5. Serve the roasted carrots topped with whipped feta.
