- 1 pound carrots, peeled and trimmed
- 2 tablespoons honey
- 2 tablespoons olive oil

- For the whipped feta:
- 4 ounces feta cheese
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the carrots with honey, olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 20-25 minutes, until tender and caramelized.
- While the carrots are roasting, prepare the whipped feta: In a food processor, blend feta, Greek yogurt, and lemon juice until smooth.
- Serve the roasted carrots topped with whipped feta.
