For the Crust:
- 2 lbs carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC).
- In a large bowl, toss the carrot pieces with olive oil, honey, minced garlic, salt, and pepper until evenly coated.
- Spread the carrots in a single layer on a large baking sheet.
- Roast for 25-30 minutes, stirring once halfway through, until carrots are tender and caramelized at the edges.
- Remove from oven, transfer to a serving dish, and garnish with fresh thyme before serving.
