A simple and elegant side dish where carrots are roasted to tender perfection with a sweet and savory honey glaze.

For the Crust:

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the carrot pieces with olive oil, honey, minced garlic, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on a large baking sheet.
  4. Roast for 25-30 minutes, stirring once halfway through, until carrots are tender and caramelized at the edges.
  5. Remove from oven, transfer to a serving dish, and garnish with fresh thyme before serving.
