A delicious and easy twist on classic pumpkin pie, perfect for fall gatherings.


Ingredients

  • 1 cup canned pumpkin
  • 1/2 cup Bisquick mix
  • 1/2 cup granulated sugar
  • 1 cup evaporated milk
  • 2 eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350ยฐF and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together pumpkin, Bisquick, sugar, evaporated milk, eggs, pumpkin pie spice, vanilla, and salt until smooth.
  3. Divide the batter evenly among the cupcake liners, filling each about 3/4 full.
  4. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow to cool completely before serving.

Notes

For best results, use fresh spices and serve with whipped cream.
