- 1 cup canned pumpkin
- 1/2 cup Bisquick mix
- 1/2 cup granulated sugar
- 1 cup evaporated milk
- 2 eggs
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350ยฐF and line a muffin tin with cupcake liners.
- In a large bowl, whisk together pumpkin, Bisquick, sugar, evaporated milk, eggs, pumpkin pie spice, vanilla, and salt until smooth.
- Divide the batter evenly among the cupcake liners, filling each about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool completely before serving.
Notes
For best results, use fresh spices and serve with whipped cream.
