Description

Soft red velvet cookies with a creamy surprise inside, perfect for a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the filling: 4 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and red food coloring.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, mix the cream cheese and powdered sugar until smooth.
  7. Scoop about 1 tablespoon of cookie dough, flatten it, add a teaspoon of cream cheese mixture in the center, and wrap the dough around it to form a ball.
  8. Place the balls on the prepared baking sheet and bake for 10-12 minutes, or until set.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, chill the dough for 30 minutes before baking to prevent spreading. Store in an airtight container for up to 3 days.
