For the Crust:

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1/4 cup milk
  • 3 cups powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
  3. Add eggs, buttermilk, oil, and vanilla to the dry ingredients. Mix until well combined. Stir in boiling water (batter will be thin).
  4. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean.
  5. For the frosting, beat the butter and peanut butter together until smooth. Gradually add milk and powdered sugar, beating until creamy.
  6. Once the cakes are cool, spread the frosting over each layer, stack them, and cover the entire cake with the remaining frosting.
