- 1 cup creamy peanut butter
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- In a large bowl, beat the peanut butter and softened butter together until smooth.
- Gradually add the powdered sugar, mixing until a dough forms.
- Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, coating evenly, and return to the baking sheet.
- Refrigerate the truffles for at least 1 hour until set.
Notes
These truffles can be stored in an airtight container in the refrigerator for up to 2 weeks. For a nut-free version, substitute with sunflower seed butter.
