Description

A moist and tender vanilla cake studded with juicy, ripe peaches and a hint of warm cinnamon. This simple, rustic cake is the perfect way to celebrate summer’s finest fruit.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup plain Greek yogurt
  • 3 medium ripe peaches, peeled and diced (about 2 cups)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually mix in the dry ingredients alternately with the Greek yogurt, beginning and ending with the dry ingredients. Fold in the diced peaches.
  5. Spread the batter evenly into the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack.
