For the Crust:
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup plain Greek yogurt
- 3 medium ripe peaches, peeled and diced (about 2 cups)
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Gradually mix in the dry ingredients alternately with the Greek yogurt, beginning and ending with the dry ingredients. Fold in the diced peaches.
- Spread the batter evenly into the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 15 minutes before transferring to a wire rack.
