Description

A sweet and salty snack mix featuring Chex cereal coated in toffee.


Ingredients

Scale
  • 9 cups Rice Chex cereal
  • 1 cup brown sugar
  • 1 cup butter
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup mixed nuts (optional)

Instructions

  1. Preheat oven to 250 degrees F (120 degrees C).
  2. In a large microwave-safe bowl, combine Chex cereal and mixed nuts if using.
  3. In a saucepan, melt butter over medium heat. Stir in brown sugar and corn syrup; bring to a boil.
  4. Boil for 2 minutes without stirring. Remove from heat and stir in vanilla extract and baking soda.
  5. Pour the mixture over the cereal and stir to coat evenly.
  6. Spread the mixture on a baking sheet and bake for 1 hour, stirring every 15 minutes.
  7. Let cool completely before serving.

Notes

Store in an airtight container for up to a week. Great for parties or snacking.
