A sweet and salty snack mix featuring Chex cereal coated in toffee.
Ingredients

- 9 cups Rice Chex cereal
- 1 cup brown sugar
- 1 cup butter
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1 cup mixed nuts (optional)
Instructions
- Preheat oven to 250 degrees F (120 degrees C).
- In a large microwave-safe bowl, combine Chex cereal and mixed nuts if using.
- In a saucepan, melt butter over medium heat. Stir in brown sugar and corn syrup; bring to a boil.
- Boil for 2 minutes without stirring. Remove from heat and stir in vanilla extract and baking soda.
- Pour the mixture over the cereal and stir to coat evenly.
- Spread the mixture on a baking sheet and bake for 1 hour, stirring every 15 minutes.
- Let cool completely before serving.
Notes
Store in an airtight container for up to a week. Great for parties or snacking.
