- 6 quarts popped popcorn
- 2 cups brown sugar
- 1 cup butter
- 1/2 cup light corn syrup
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 10 ounces marshmallows
Instructions
- Preheat oven to 250 degrees F (120 degrees C).
- Place popcorn in a large roasting pan.
- In a medium saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt.
- Bring to a boil, stirring constantly.
- Boil for 5 minutes without stirring.
- Remove from heat and stir in vanilla extract and baking soda.
- Pour over popcorn and stir to coat.
- Bake in preheated oven for 45 minutes, stirring every 15 minutes.
- Remove from oven and let cool slightly.
- Melt marshmallows in a microwave or double boiler, then drizzle over the popcorn mixture and stir to combine.
- Spread on waxed paper to cool completely, then break into pieces.
Notes
For extra crunch, ensure the mixture is baked thoroughly. Store in an airtight container.
