For the Crust:
- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 jalapenos, seeded and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 limes, juiced
- 1 cup corn kernels
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup chopped cilantro
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onion, jalapenos, and garlic, and sautรฉ until softened.
- Add chicken breasts and pour in the chicken broth. Bring to a boil, then reduce heat to a simmer and cook for 20 minutes, until chicken is cooked through.
- Remove chicken and shred with two forks. Return chicken to the pot. Stir in lime juice, corn, cumin, salt, and pepper. Simmer for another 10 minutes. Garnish with cilantro before serving.
