Description

These skewers feature marinated pork in a spicy jerk sauce, grilled to perfection and paired with a fresh mango salsa for a burst of tropical flavors.


Ingredients

  • 1.5 kg pork shoulder, cut into 2-inch cubes
  • 3 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 2 ripe mangoes, peeled and diced
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • Juice of 2 limes
  • Fresh cilantro, chopped
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a large bowl, combine the pork cubes with jerk seasoning and olive oil. Mix well and marinate in the refrigerator for at least 2 hours.
  2. Preheat the grill to medium-high heat.
  3. Thread the marinated pork onto the soaked skewers.
  4. Grill the skewers for 10-15 minutes, turning occasionally, until the pork is cooked through and slightly charred.
  5. While the pork is grilling, prepare the mango salsa: In a bowl, mix diced mangoes, red onion, red bell pepper, lime juice, cilantro, salt, and pepper.
  6. Serve the grilled skewers with the fresh mango salsa on the side.

Notes

For extra heat, add fresh Scotch bonnet peppers to the marinade. Ensure skewers are fully soaked to prevent burning.
