Description

Light and flavorful turkey meatballs seasoned with classic Greek herbs, served with a cool, refreshing homemade tzatziki sauce for a perfect, healthy meal.

Ingredients

Scale

For the Crust:

  • 1 lb ground turkey (93% lean)
  • 1/2 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup red onion, finely minced
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tsp extra virgin olive oil

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, panko, egg, red onion, garlic, dill, mint, oregano, salt, and pepper. Mix gently with your hands until just combined.
  3. Shape the mixture into 16-18 meatballs, about 1.5 inches each, and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes, or until the meatballs are cooked through and golden brown.
  5. While the meatballs bake, make the tzatziki. In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, and olive oil. Season with a pinch of salt.
  6. Serve the warm meatballs with the creamy tzatziki sauce for dipping or drizzling.
