Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together pecans, coconut, graham cracker crumbs, and sugar.
- Beat eggs and vanilla extract in a separate bowl, then stir into the dry mixture until well combined.
- Pour the mixture into the unbaked pie crust.
- Bake in the preheated oven for 45 minutes, or until the top is golden and set.
- Allow to cool completely before serving.
Notes
For a mini version, use muffin tins and adjust baking time to 20-25 minutes. Store in an airtight container.
