Ingredients

  • 1 pound ground lamb
  • 1/2 cup shelled pistachios, chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • 1 small onion, grated
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 2 tablespoons olive oil
  • 1/4 cup pomegranate molasses
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, combine ground lamb, chopped pistachios, parsley, mint, grated onion, minced garlic, cumin, coriander, salt, and black pepper.
  2. Add the beaten egg and mix until well combined. Form the mixture into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
  4. In a small bowl, whisk together pomegranate molasses, honey, and lemon juice.
  5. Brush the glaze over the cooked meatballs and cook for an additional 2 minutes to caramelize.
  6. Serve hot with rice or pita bread.

Notes

For a spicier version, add 1/2 teaspoon of red pepper flakes to the meat mixture. Ensure pistachios are finely chopped for even distribution.
