Description

Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1/4 cup fresh basil leaves, chopped
  • 1 lemon, zested and juiced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 rice paper wrappers
  • 1 cucumber, julienned
  • 1 carrot, julienned

Instructions

  1. Prepare the salmon: Season the salmon fillets with salt, pepper, lemon zest, and chopped basil.
  2. Cook the salmon: Heat olive oil in a pan over medium heat and cook the salmon for 4-5 minutes per side until flaky.
  3. Assemble the rolls: Dip a rice paper wrapper in warm water for 10 seconds, then lay flat. Add salmon, cucumber, carrot, and a squeeze of lemon juice in the center.
  4. Roll up: Fold the sides of the wrapper over the filling and roll tightly.
  5. Serve: Cut rolls in half and serve with extra lemon wedges.

Notes

For a vegetarian version, substitute salmon with tofu. Ensure basil is fresh for best flavor.
