Ingredients

- 2 salmon fillets (about 6 oz each)
- 1/4 cup fresh basil leaves, chopped
- 1 lemon, zested and juiced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 rice paper wrappers
- 1 cucumber, julienned
- 1 carrot, julienned
Instructions
- Prepare the salmon: Season the salmon fillets with salt, pepper, lemon zest, and chopped basil.
- Cook the salmon: Heat olive oil in a pan over medium heat and cook the salmon for 4-5 minutes per side until flaky.
- Assemble the rolls: Dip a rice paper wrapper in warm water for 10 seconds, then lay flat. Add salmon, cucumber, carrot, and a squeeze of lemon juice in the center.
- Roll up: Fold the sides of the wrapper over the filling and roll tightly.
- Serve: Cut rolls in half and serve with extra lemon wedges.
Notes
For a vegetarian version, substitute salmon with tofu. Ensure basil is fresh for best flavor.
