- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 tsp lemon zest
- 1 tsp lime zest
- 1 cup pitted cherries, halved
- 1/2 cup chopped pistachios
Instructions
- Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of the pan to form the crust.
- In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, lemon juice, lime juice, lemon zest, and lime zest until fully incorporated.
- Gently fold in halved cherries and chopped pistachios.
- Pour the batter over the crust and smooth the top. Bake for 55-60 minutes or until the center is set.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
For best results, use fresh citrus juices and zest. Store in an airtight container in the refrigerator for up to 5 days.
