Description

A creamy cheesecake featuring the bright flavors of lemon and lime, combined with sweet cherries and crunchy pistachios for a refreshing dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 1 cup pitted cherries, halved
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of the pan to form the crust.
  3. In a large mixing bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, lemon juice, lime juice, lemon zest, and lime zest until fully incorporated.
  5. Gently fold in halved cherries and chopped pistachios.
  6. Pour the batter over the crust and smooth the top. Bake for 55-60 minutes or until the center is set.
  7. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  8. Refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, use fresh citrus juices and zest. Store in an airtight container in the refrigerator for up to 5 days.
