A creamy and flavorful soup made with lentils, coconut milk, and fresh tomatoes.
Ingredients

- 1 cup dried lentils
- 1 can coconut milk
- 2 tomatoes, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- Salt to taste
Instructions
- Rinse the lentils and set aside.
- In a pot, sauté onion and garlic until fragrant.
- Add lentils, tomatoes, cumin, and water. Bring to a boil.
- Simmer until lentils are tender.
- Stir in coconut milk and salt. Serve hot.
Notes
For a spicier version, add chili flakes.
