Description

A creamy and flavorful soup made with lentils, coconut milk, and fresh tomatoes.


Ingredients

Scale
  • 1 cup dried lentils
  • 1 can coconut milk
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Rinse the lentils and set aside.
  2. In a pot, sauté onion and garlic until fragrant.
  3. Add lentils, tomatoes, cumin, and water. Bring to a boil.
  4. Simmer until lentils are tender.
  5. Stir in coconut milk and salt. Serve hot.

Notes

For a spicier version, add chili flakes.
