- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 cups broccoli florets
- 1 cup orzo pasta
- 6 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sauté until softened, about 5 minutes.
- Stir in the broccoli florets and orzo pasta.
- Pour in the vegetable broth and Italian seasoning, then bring to a boil.
- Reduce heat and simmer for 10-15 minutes, or until orzo and broccoli are tender.
- Season with salt and pepper, and stir in Parmesan if using.
- Serve hot.
