Description

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups broccoli florets
  • 1 cup orzo pasta
  • 6 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: 1/4 cup grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until softened, about 5 minutes.
  3. Stir in the broccoli florets and orzo pasta.
  4. Pour in the vegetable broth and Italian seasoning, then bring to a boil.
  5. Reduce heat and simmer for 10-15 minutes, or until orzo and broccoli are tender.
  6. Season with salt and pepper, and stir in Parmesan if using.
  7. Serve hot.
